Live an authentic experience in the heart of Ogliastra with our Culurgionis Course, dedicated to Sardinia’s most iconic dish. This hands-on workshop will guide you step by step in preparing the famous culurgionis, recognizable by their signature spighitta (wheat-ear closure) and filled with local flavors such as su fiscidu and casu e fitta. It’s more than just cooking: it’s a journey through the history, traditions, and authentic tastes of Sardinia.
The course takes place in the enchanting countryside of Jerzu, at the estate of Lidia Muceli, a master pasta maker with over forty years of experience and founder of Jerzu’s very first pasta workshop. Lidia will share the origins of culurgionis, between myths and local tales, showing you how every gesture — from choosing ingredients to shaping the spighitta — holds centuries of gastronomic culture.
During the lesson, you will practice the art of preparing culurgionis firsthand, learning how to create the dough and fillings using traditional methods. Each participant will receive personal guidance to master the spighitta closure and prepare perfect culurgionis ready to enjoy.
At the end of the class, you’ll sit down to taste the culurgionis you’ve made, paired with a glass of local Cannonau wine and other typical products from Ogliastra. For those who wish, the experience can continue with a traditional dinner at our Home Restaurant or a local-style aperitivo in the garden — the perfect way to extend the magic of the day.
